Processes In The Thermal Degredation Of Organic Matter

At low temperature, volatiles, mostly water, evaporate; some chemical changes occur below boiling point, but many organic compounds are stable until all the water has boiled off and the temperature rises above the boiling point. At sufficiently high temperatures, the organic molecules thermally degrade, releasing altered organic molecules and more volatiles, which leave as smoke. Generally, this process also absorbs energy.
